Why Coconut Bliss Doesn't Make a Coconut Milk Beverage


luna For years our customers have asked us to make a "coconut milk beverage" as an alternative to soy milk and rice milk. Since other companies have recently started coming out with coconut milk beverages, we've received even more questions as to why Luna & Larry's does not offer our own version.  There are two main reasons:

Reason #1:  Luna & Larry's Coconut Bliss specializes in making the best ice cream available, without the use of dairy, soy, rice, sugar, fillers, or anything added that is not available in your local natural foods store.   While we have certainly had discussions about diversifying our product line, at this time our entire staff is dedicated to providing and perfecting this one thing.  We are enjoying an experience of simplicity and devotion to our Coconut Bliss.


Reason #2:  I'll start off by saying that you can make a very yummy version of Coconut Bliss in your own kitchen. We did it back in 2004 with a $1.50 hand-cranked ice cream maker that we picked up at the Goodwill, some cans of coconut milk, agave syrup, and vanilla extract, all from our local natural foods store. However, the way we make Coconut Bliss now is streamlined and (in my opinion) close to perfection. And that took several years to find just the right coconut milk, just the right cocoa, vanilla, etc. (not to mention the wonderful staff who operate the superior equipment that makes the Coconut Bliss that you buy at the store today-- ALOT smoother and creamier than what we first made with our hand-crank).


Milks (or Mylks as they're affectionately called by the Raw/Vegan community), on the other hand, are very simple, yummy, and nutritious to make at home.  That is what I do for myself and my family nearly every day.  We have tried making our own version of coconut milk beverages and we were not satisfied with the results in the least, especially when considering what would be needed to keep it looking white and shelf stable.  In order to get to an acceptable fat level and flavor we'd have to add stabilizers, binders, and additives.  I personally wouldn't feel very good about making a product that is heavily watered down coconut milk with sugar, vitamins, and stabilizers added to it.  I can easily--and with lots of excitement-- teach you how to make an inexpensive, all organic, fresh-sprouted nut mylk in your own kitchen, that blows away anything you'll buy in the store, and with minimal cleanup and no wasteful packaging.

You will need the following:

1 c. almonds, soaked overnight or 8 hrs, and rinsed well (you can also use Sunflower Seeds, Hazelnuts, Brazil Nuts, Cashews, or blends of these--I personally love 50/50 Almond & Brazil Nuts)

Organic Vanilla Extract (optional)

Sweetener (optional)- 2 tsp. Agave, Brown Rice Syrup, Maple Syrup, etc. -or- up to 5 drops Stevia)

Vita-Mix or Blender

Nut Milk Bag or Strainer

Step 1: Rinse the nuts/seeds well, and add to the Vita-Mix.  Fill to 4 cup line w/ filtered water.

       

Step 2:  Blend for 10-15 seconds in Vita Mix on high -or- in a regular blender for up to 30 seconds. 

Step 3:  Pour into your nut mylk bag (or very fine strainer, but I highly recommend investing in a bag).  Strain, being careful not to press too hard.  Use slow and gentle pressure until there is only a dry pulp left.

             

Step 4:  Pour your mylk back into blender, adding 1/2-1 tsp. of vanilla, a pinch of salt, and sweetener of your choice.  You can also add regular or raw cacao powder to make a Chocolate Mylk.  Blend again for a few seconds, and enjoy!
