A Coconut Bliss Love Letter!

Dear Luna & Larry:

When I gave up dairy, legumes (soy), and grains (rice) to go paleo in January, I figured ice cream was a thing of my past. Then my cousin told me about your Coconut Bliss, and like most of the specialty foods I hear about, I found it at Mother’s.

Since going on this diet, I’ve bent a couple of the rules because it made sense to me to. I will eat things sweetened with raw honey or organic agave nectar, although in extreme moderation, and I eat chocolate (about once a month). I prefer to eat chocolate that’s produced as naturally as possible, so my two favorites have become the Double Dutch Choco Macaroon Cookies from Good to Go and your Dark Chocolate ice cream.

Aside from chocolate, I thought I’d have to give up my all-time favorite dessert when I chose this lifestyle: Deep Fried Bananas with Coconut Ice Cream. YUM. When I discovered your Vanilla Island flavored ice cream, though, I decided to try just warming up some mashed bananas and having them with that. It was amazing! It turns out I don’t need the “fried” to be satisfied, and I went through a phase early in my diet of having this treat almost every night.

How do you do it? I can taste the coconut in the ice cream, but to think that it’s primarily coconut products? I would never guess. The texture and consistency are fantastic, the color is lovely, and the flavor is out of this world.

You know, I lived in Eugene for two years, and I worked the Oregon Country Fair in 2007, but I didn’t know you were just around the corner from me then. I had to move back to Southern California to find you, and now I want to go back to Oregon to tour your facilities somehow and taste your flavors at the source!

If you’re looking for flavor suggestions from strangers who live on whole foods and can’t eat peanuts, I’d love to have a dark chocolate-cashew or dark chocolate-almond option. Maybe with some fudgy trails? Now I’m just making myself hungry.

Anyways, thank you so much for providing a satisfying alternative to the ice cream alternatives I can’t eat. Your dedication to whole ingredients and deliciousness have helped me a great deal in my efforts to change my eating habits without feeling like I’m suffering!
