A Nutrition Packed Pudding Recipe

Small but mighty, chia seeds can absorb up to 9 times their weight in liquid. They also pack a powerful nutritional punch with 2 grams of protein, 4 1/2 grams of fat, 6 grams of carbohydrates and 5 1/2 grams of fiber, plus omega 3 fatty acids, potassium, magnesium, and antioxidants in a single tablespoon. Hailing from Mexico, these tiny seeds were used by Aztec and Mayan warriors as a food staple and for medicinal purposes. A member of the mint family, chia seeds, (from the plant Salvia hispanica), are versatile and neutral in flavor, making them a perfect addition to all sorts of recipes.

Blissful Chia Pudding


1 pint of Vanilla Island Coconut Bliss
½ cup of water
¼ cup chia seeds


Soften the pint of ice cream overnight in the refrigerator. Mix ¾ cup Coconut Bliss Vanilla Island with ½ cup of water. Add ¼ cup chia seeds and thoroughly combine all ingredients in a mason jar. Cover and refrigerate for 2 ½ hours or overnight.

Blissful Chia Pudding Parfait

Sprinkle granola of choice into the bottom of a glass. Add a generous layer of Blissful Chia Pudding. Add a layer of fresh blueberries. Place strawberries sliced vertically around inside of the glass. Add 3 scoops of Cherry Amaretto Coconut Bliss. Garnish with granola and mint. Enjoy!
