The organic fair trade dark chocolate that envelops our new dipped bars, and is in our pint flavors with chocolate flakes, is crafted in an allergen-free facility in a small coastal town south of Lima, Peru. The processing facility is family owned and specializes in cocoa and chocolate production for smaller markets. The organic and fair trade certified cocoa beans are purchased from small-scale farmers in the growing regions of Northern and Eastern Peru. Some of these farmers are part of cooperatives that support social programs in their communities. The processor independently supports programs that includes building and renovating schools, and providing farmers with the necessary tools for successful cocoa production. They also provide free training sessions to the farmers on various topics such as modern pruning techniques, fermentation, and health care.
We picked this chocolate expressly because it meets our rigorous ingredient and allergen control standards. It is lightly sweetened with organic, fair trade cane sugar. Other sweeteners are not currently available in a chocolate as fine as this. One serving of Mint Galactica, Salted Caramel & Chocolate or Chocolate Chip Cookie contains about 2.5 grams of cane sugar. A single bar of Coconut Almond in Chocolate, Salted Caramel in Chocolate, Raspberry Acai in Chocolate or Vanilla Island in Chocolate contains about 4.3 grams of cane sugar.
