The air is crisp as the last autumn leaves drop from the valley trees, marking the change of the seasons here in Oregon. The week of Thanksgiving is filled with memories of family, friends, food, laughter, and anticipation. Kim Gibson Clark, the CEO of Coconut Bliss, wife, mother, and daughter, rises early to get to her parents’ house where she and her Mother Liz negotiate who’s in charge before planning and preparing a feast for over 20 friends and family.
Navigating everyone’s dietary needs takes skillful organization and careful curation of time-honored recipes. While all the traditional Thanksgiving dishes will be represented, many dishes will be vegan, vegetarian, gluten-free, and/or dairy-free. There are at least two different versions of every item on the table including vegan and gluten-free stuffing
Those gathered around the table include Kim’s parents, Jock and Liz, their three kids and their spouses, grandkids, aunts, uncles, cousins, and friends who are like family. It’s a special sight to see the second, third, and fourth generation Gibson’s all around the table to share in this day of gratitude. Each year before everyone tucks into their meal they go around and name one thing that they are grateful for. This year Kim’s daughter, Zoe, will start it off by sharing an essay she wrote about what gratitude means to her and what she is most grateful for. We are fairly sure it will include Coconut Bliss.
In anticipation of Thanksgiving each year, Kim’s mom Liz grows Delicata and Butternut for all of the squash dishes, and Dickinson pumpkins for the pies. The farm fresh pumpkin and squash impart exceptional flavor and character, which is a signature for all of the Gibson family products. Mama Liz is renowned for her pie making abilities and churns out an impressive selection of desserts to compliment Thanksgiving dinner. All of these pies pair wonderfully with Coconut Bliss’ smooth and creamy texture.
Last year, Kim made a vegan and gluten-free Coconut Bliss No-Bake Pumpkin Cheesecake, adding our Infinite Coconut flavor to the filling to create a delectable and simple dessert. This year, she will be making our Vegan Pumpkin Cream Pie with only eight simple ingredients. We’ll give you a hint. It includes an entire pint of Madagascan Vanilla Bean.
Thanksgiving for Kim is a warm and joyous holiday. For three generations, the Gibson Family has created frozen desserts and lovingly crafted products through their family farm. But this is a day that the family doesn’t talk about business. It’s a day for hugs and laughter. It’s the season of giving and gratitude.
