Coconut milk, the very basis for Coconut Bliss, is a remarkable food from a remarkable plant. In Sanskrit, the coconut palm tree is called the kalpavriksha (wish-fulfilling tree) because it is “the tree that gives all that is necessary for living”. It’s fruit provides enough nourishment to sustain life, while its wood, bark and leaves furnish raw materials for building and thatching shelters, making ropes, mats, and containers, and even clothes. In India it is said, “He who plants a coconut tree plants food and drink, vessels and clothing, a home for himself and a heritage for his children.”
The coconut milk that is made from the meat of the coconut is a culinary masterpiece. It’s beauty is not only it’s creamy texture and delicious taste, but also the vast array of health benefits it offers. Each cup provides 5.5 grams of protein, 631 mg of potassium, and 4 mg of iron. The real treasure, however, are the unique medium-chain triglycerides (MCTs) that make up the majority of the fat content. Unlike other fats, MCTs do not need to be broken down and can be used immediately by the body as energy. Instead of being stored as fat, the calories contained in MCTs are efficiently converted into fuel for immediate use by organs and muscles.
Roughly half the MCTs in coconut milk is in the form of the incredibly healthful lauric acid. When lauric acid is present in the body, some of it is converted to a monoglyceride called monolaurin. Both lauric acid and monolaurin can destroy harmful pathogens like bacteria, viruses and fungi. Additionally, lauric acid has been shown to increase the good HDL cholesterol in the blood to help improve cholesterol ratio levels.

Coconut Milk from our Thailand Supplier
Our certified organic coconut milk from Thailand is produced by a family-owned organic coconut farm and processing facility. Luna & Larry went to Thailand to see the farm and connect with the people when they first realized they were going to need a large, steady supply of organic coconut milk. In 2011, several members of the Bliss crew visited the farm and facility again. They found the groves of organic Mawa coconut trees beautifully managed and lush with vegetation and life. They learned the delicious Mawa coconut is a hybrid of Malaysia Yellow Dwarf and West African Tall. It’s delicate flavor profile and creamy texture is an essential part of the Coconut Bliss recipe.
Coconut Milk from a Local Producer
Another source for our organic coconut milk is right here in Springfield, Oregon, just a quick trip from our office in Eugene. We teamed up with a local organic juice producer to turn shredded coconut into premium coconut milk. The shredded coconut comes from organic farm cooperatives in the Philippines. Some of our crew visited the Philippine coconut groves and the processing facility during their trip to the region in 2011. They were impressed with the dedication to organic farming and the good care of the employees.
Each week, this coconut milk is made fresh and delivered to our production facility. It’s ready to go into Coconut Bliss recipes, adding it’s own special touch to all of our flavors.
